Well, when I found this new product, the VeganEgg, my first thought was to immediately put it to the test.  One of the things I miss most since being Vegan, was an omelette.  Naturally, when I found the VeganEgg, I wanted to make one.  So I grabbed some of my favorite veggies, and some vegan cheese, and put this to the test!

Ingredients

  • VeganEgg
  • Kale
  • Spinach
  • Mushrooms
  • Tomato
  • Parsley
  • Daiya Cheese
  • Olive Oil
  • Garlic
  • Old Bay Seasoning
  • Parsley
  • Basil

Instructions

  1. To make 1 vegan egg, you take 2 tablespoons of vegan egg powder +1/2 cup of ice cold water + whisk . (If you use a hand blender it makes it fluffier. Season with Old Bay Seasoning, Garlic and Pepper
  2. slice/ dice your favorite veggies, for my recipe I used Kale, Spinach and tomato.
  3. Sautee veggies together in Olive oil, add tomatoes last.
  4. Add Vegan Egg Mixture
  5. Cook until the Vegan Egg becomes solid
  6. Add Vegan Cheese
  7. Fold over in half
  8. Plate and garnish with parsley/basil chopped up :)
  • Servings : 1
  • Ready in : 15 Minutes
