I was obsessed with finding recipes that would work and keep my hubby and myself full during our focus on getting back to cleansing and working out again. Well, Google, and Pinterest drove me to veggie bowls, and it was history every since.

Veggie bowls, are simple flavorful and filling.

Here is a few different different ways to make it.

Ingredients

  • Sweet Potatoes (3)
  • Kale (3) bunches
  • Portobello Mushroom (package)
  • Quinoa (2-3 cups cooked)
  • Avocado (4)
  • Black Beans (2 cans)
  • Sunflower Seeds (unsalted)
  • Liquid Aminos
  • Garlic (as much as you like)
  • Olive Oil
  • Himalayan Sea Salt
  • Pepper
  • Steak Seasoning
  • Chickpeas (2 cans)
  • Fresh Dill

Instructions

  1. Remove skin from sweet potatoes
  2. Dice them and season hem with salt & pepper
  3. Bake them on top of parchment paper in a sheet pan for 20 mins, half way through sprinkle fresh dill on top
  4. Saute kale, with liquid amino's (not too much) and steak seasoning
  5. Don't allow the kale to get overly done
  6. Black beans can be from the can or fresh. Cook them and season lightly with pepper.
  7. For the portobello mushrooms, sauté them lightly in a pan with olive oil and fresh garlic
  8. Chickpeas can be from the can or fresh. Cook them in a pan with olive oil, and season to taste and add fresh dill
  9. once done plate each item around the bowl, top with quinoa, avocado, and sunflower seeds… then INDULGE!
