Dunkin Peppermint Mocha Latte Brownies (The Best Brownie Recipe Ever)

When it comes to Brownies, they need to be soft…a little fluffy.. but oooeeeyyy goooeeeyyyy…with a little crunch right?  So, as a Vegan.. I needed all of those things to exist….. in one Brownie.. and I think we’ve got it!

The recipe is simple.   The ingredients can all be purchased at your local store.  It doesn’t take too much brain power, just some great mixin and stirring skills! LOL!

Be prepared to be amazed and, Thank God for this recipe!

Ingredients

  • 4 Tablespoons of Just Egg
  • 1/2 cup water
  • 1/2 cup vegan butter or coconut oil
  • 1 cup of raw cane sugar
  • 1 cup of organic brown sugar
  • 1 tsp of vanilla extract
  • 1 cup of Flour (gluten free if you want to make your batch gluten free)
  • 1 cup of Hershey's unsweetened cocoa powder
  • 1/2 tsp of salt
  • 1 tsp of raw peppermint extract
  • 1 tsp of Dunkin Coffee grounds original blend
  • 1 tsp of banking powder
  • 1 cup of non dairy chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F and line a 7 x 11 pan with parchment paper.
  2. Melt the vegan butter (earth balance brand preferred), and measure 1/2 cup. I do this by placing the vegan butter in a glass measuring cup, inside of a pot with water warming, or inside of a microwave in 30 second intervals, until melted.
  3. In a large bowl, whisk the melted vegan butter and sugars together.
  4. Add the just eggs, peppermint, vanilla, whisk until evenly combined.
  5. Over the same large bowl, sift in the flour and cocoa powder.
  6. Add the salt, baking powder, and coffee grounds and stir with a large wooden spoon until just combined, do not over mix.
  7. Fold in half of the chocolate chips. Pour the batter into the prepared pan and smooth out the top with a spoon or your hands.
  8. Sprinkle the rest of the chocolate chips on top of the batter.
  9. Bake for 35-40 minutes.
  10. The brownies may still be bubbling and not look done, but they will firm up a lot as they cool.
  11. Remove from the oven, allow to cool in the pan for 15 minutes, then pull the brownies out, using the parchment paper and let cool for another 15-30 minutes before slicing and serving.
