Who doesn’t love Italian Food? Well….I do.  I love the fresh herbs, I love the sauce, I love the garlic.  I. Just. Love. It.

This recipe was created out of a random case of hunger and a lack of time.  I wanted to cook something that could last for like 2 days, but keep the flavor.   It’s been hectic working a 9-5, running Cooking with Que, and building a brick and mortar location, called The Kitchen by Cooking with Que.  You are busier than you could ever imagine.  So, I wanted something hearty that my family could eat.

So I loaded it with a bunch of fresh goodness and garlic and hardly any clean up!

Ingredients

  • Mostaccioli Noodles (16 oz)
  • Trader Joes Soy Chorizo 1 pack
  • Fresh Cherry Tomatoes 1-2 containers (depends on how much you love tomatoes)
  • Portobello Mushrooms 1-2 packages of fresh ones, sliced or you can slice them yourself
  • Fresh Minced Garlic (I used like 10-12 cloves..you can never have too much garlic, so just do it... I would)
  • Modena Balsamic Glaze 2 tbsp (add 1-2 more depending on the flavor...all brands are not created equal)
  • Fresh Spinach 2 bunches
  • Fresh Basil 6-8 fresh leaves
  • Fresh Parsley Bundle
  • Braggs Organic Sprinkles 2 tbsp
  • Ground Turmeric 1 tsp
  • Optional: Crushed Red Pepper Flakes,

Instructions

  1. In one pot boil your noodles, follow the instructions on the box. DO NOT ADD SALT TO THE WATER! What you can do is add garlic to the water. It's amazing, just trust me.
  2. Drain noodles and place to the side
  3. in the same pot, sauté spinach, tomatoes, garlic, mushrooms, and soy chorizo
  4. All the ingredients should keep their same color, don't cook them too fast, '
  5. Use a potato masher, to squish the tomatoes. They should be soft and easy to squish. (do not judge my verbiage, or use of a potato masher, to squish tomatoes! lol)
  6. Add pasta, and all the seasoning, stir together. This smells amazing. I know.
  7. To top this dish off, add your balsamic glaze. Just the icing on the freaking cake!
  8. Taste it, if you would like this to be spicy add crushed red pepper (I would)
  9. Plate this masterpiece, and garnish it with fresh parsley and basil and enjoy!
