Eggplant is a Fruit that everyone thinks if a vegetable, and on top of that, many of us walk by it because its not a normal item that people cook everyday in a regular household.

That’s all about to change after today. This recipe is super simple, and easy.  It tastes pretty fricking amazing. My husband is not an Eggplant lover, but he ate it, and said, “Make it like this every time.”  That my friends is sign that I did my job! LOL!  The kids #HulkSmashed it as well!  I feel pretty accomplished!

Ingredients

  • 2 Eggplants
  • Marinara Sauce (home made or a jar or 2 if you like it saucy!!
  • Fresh Basil
  • Fresh Parsley
  • Salt
  • Seasoned Pepper
  • Garlic
  • Daiya Mozzarella Vegan Cheese (or replace with reg cheese if you are not vegan lol )
  • Olive Oil

Instructions

  1. Slice Eggplant in circles, not to thin
  2. Lightly Salt the Eggplant so that it extracts all the water inside
  3. After about 10 mins, take a paper towel, to pat the slices dry
  4. Drizzle Eggplant slices with olive oil
  5. Season with salt, seasoned pepper, and garlic
  6. Place a scoop of marinara on each eggplant slice
  7. Sprinkle each slice with chopped basil and parsley mixed together
  8. Top each eggplant slice with Daiya Shredded Mozzarella
  9. Bake in preheated for 20 mins at 350.
