Happy Easter! He is Risen! Food, Family, & Fun!

I hope everyone is having an amazing day. Today is the first day I have felt almost 100% since dealing with my most recent Sarcoidosis flare up. I have literally been in bed for 5+ days. A saint was out for a minute, breathing treatments every couple of hours. Steroids, no sleep. JUST ANNOYING! But He is Risen! Today, I felt like getting up! Going to Church! and even Cooking!! I was soo excited!

Honestly, the holidays are different with Momma not being here, Rest In Heaven Momma!. I know everyone says, it will get easier. it doesn't. This morning my Sissy called and said, make sure you go check on Granddaddy 🙂 She said yesterday, he told her, he made dinner for one and it made him feel lonely. Well if I ever got motivated it was then. I literally went to church, and right after service I hit the grocery store. We all know going to the grocery store on a holiday is a #Fail, but today fam...it wasn't though! I was sooo surprised!

I wanted to cook something simple and healthy for the fam!

Sooo I made:

Vegan Mac N Cheez
Sauteed Kale
Potato Salad
Baked Lemon Pepper Chicken (Amish) for the Meat Eaters
Fresh Cantaloupe and Pineapple for Dessert

When I got to Daddys house he cooked Green Beans (with Meat! He's from Down South... so I can't judge him), Corn Bread. My Mommy made more baked chicken and Hawaiian Rolls and then Uncle Ray came through with a his own Honey Baked Ham (My Mommy said it's like Momma used to make it) and Potato Salad.

So we had a mini feast! I always cook, because they will let a Saint starve! LOL! Either way, it's an amazing day and the family is all together. Love on your family while you have them. Celebrate each other and tell each other how much you love one another.

I definitely want to tell you all THANK YOU for rocking with me so many years. From the beginning, when there was only one recipe on the site. I'm grateful for you. I really appreciate you all. Thank you for growing with me!
