I almost kept this to myself, but we all deal with life right? Imagine having a segment on Fox 2 News in the morning....literally prime air time... and you don't have everything that you need.
I'm talking its the week before the Super Bowl! The beginning of Black History Month, and Heart Health Awareness and you get invited to talk about some amazing recipes that can be used for Super Bowl Parties for those family and friends. I'm excited! Some of the recipes that we are known for is the Buffalo Cauliflower Tacos and the Chorizo Queso Dip...so we go with those two ideas along with some oven roasted (not deep friend) buffalo wings, for the meat eaters in the house!
I'm set to be on the segment with Deena Centofani, Lee Thomas, and Ryan Ermanni, all of the faves! Set to be there by 9:30 but the work starts before hand. This segment was during Michigans Winter Storm Dante (it had some name.. I just remember calling it Dante) Listen, it snowed uncontrollably and the weather was like -35 degrees! It was aweful! Because of the weather... Trader Joes couldn't get deliveries, so they couldn't get Soy Chorizo, the main ingredient for the Vegan Chorizo Q'ueso,... I drove around and checked every neighboring store. So I knew I had to change of the recipe!
New recipe.....I called it Enchilada Dip, it was like the best mistake ever! It was sooo tasty and literally everyone loved it,,,but that wasn't our only last minute change. Oh people...it got worse. We were at the station setting out the display for a segment that was airing live in less than 10 minutes...and I realize...I left the ingredients to the tacos.....ok fam...I'm gonna keep it real with you. When I say left the ingredients, I mean, I had the buffalo cauliflower stuffing, but no street taco shells, and no green-age. I felt like I was trapped in a scene from Friday! Peanut Butter, no jelly. Ham no Burger.....In that moment, my super hero protective shield had been penetrated. I wanted to scream, cry, holler, swear, and wipe of my red lipstick (which was all the makeup I had to wear in my purse because my daughter took my ENTIRE make up bag), but nevertheless.......the show must go on.
Then one of my fav teddy bears on the set says....Que (seeing me about to lose it) you got chips? Just turn em into nachos.... At that moment, I knew God was kissing me on the forehead and saying...Everything is gonna be alright, in a weird Al Green voice, lol. (honestly, you would crack up too if you heard the stuff that goes on in my head) So I scrambled grabbed some chips dumped the on a plate, topped them with Daiya Shreds, and loaded those babies up with fresh buffalo cauliflower, and topped them with a creamy avocado salsa! and BOOM! Buffalo Cauliflower Nachos were born! Can I just say..... they were SUPER LIT! OMGEEEEE!!! So good!
All this happened and it wasn't even 11 am. I was exhausted by the time I left the station, but EVERYONE LOVED EVERYTHING!

Hey beautiful! I went on Fox a few weeks back and forgot bread. I had 4 slices and 6 sammies to make. So we improvised! Gluten free carrot dogs and sloppy Joe’s lol. Then there was the time we burnt the sandwiches. And forgot the cheese. (Have I told you I suck at mornings..) anywho, you got this. I live you gurl.
Sooo many reasons I love you! I have to remind myself…. that I’m human!
