Ingredients

  • 1/3 cup sugar ( Or 1/4 cup Agave nectar )
  • 4 Tbsp Cornstarch
  • 1/8 Tsp Salt
  • 3 cups of coconut milk ( Silk )
  • 1 1/2 Tsp Vanilla extract
  • 3 Ripe Bananas ( Sliced )
  • Vegan Vanilla Wafer Cookies

Instructions

  1. Put the sugar ( or Agave ) in a saucepan with the cornstarch and salt.
  2. Slowly whisk in the Coconut milk
  3. Bring to a boil on medium-low heat . Cook for 5-10 minutes until thick. WHISK , WHISK ,WHISK.
  4. Turn off and remove from heat . Add Vanilla and Bananas .
  5. Line whatever dish you will be serving from with vanilla wafers. spread the hot pudding over. * Make sure the bananas are covered with pudding so that they do not turn brown.
  6. layer the pudding with more cookies .
  7. Cover and refrigerate until cool and serve!
