Ingredients

  • 2 boneless, skinless chicken breast halves ½ cup (for Meateaters)
  • 1 Bag of Gardein Chicken (for Vegans)
  • 2 tbsp of your Choice of Caesar Dressing
  • 4 cups (10 oz) romaine lettuce leaves torn
  • red onion (diced) (optional)
  • 1 cup grape tomatoes, cut into halves
  • 2 tbsp grated Parmesan cheese (vegan or nah)
  • 4 (6-inch) whole wheat tortillas (or pita rounds, cut in half)
  • avocado diced (optional)
  • alfalfa sprouts (optional)
  • Corn ( frozen or canned, no salt added)
  • fresh parsley

Instructions

  1. Preheat grill or broiler.
  2. Brush both sides of chicken breasts (or Vegan Chicken) with 2 tablespoons dressing.
  3. Grill chicken 5 inches from heat source 6 minutes per side or until chicken is cooked through. Slice crosswise into ¼-inch slices.( 165 degrees) or follow instructions on packaging for Gardien
  4. Combine , red onions, tomatoes, corn, diced avocado, parsley and cheese in large bowl; toss with remaining ½ cup dressing.
  5. Mound mixture in center of tortilla
  6. Top with alfalfa sprouts, if you want.. you know me.. I WANT IT ALL!
  7. If using pita round, cut in half and stuff with mixture, topping with alfalfa sprouts. OR.. if you have a tortilla.. ROLL IT UP!!
  8. Plate it up... and HULKKKK SMASHHHH
