So ta couple weekends one of my bestfriends for over 20 years had her 1st Baby Shower! It was a spectacular event, needless to say. She lives in Germany but we all met in Georgia for the shower. The cool part is there were several health conscious foodies there. Vegetarians, meat eaters and myself a vegan. The event was catered, and there were a few homemade dishes to set it off, but I wanted to make sure that there was food there that I would love. I took inventory of the fridge on arrival, and figured I would need to go to the grocery store, but I wanted breakfast first.

In the fridge I looked for all veggies of course and checked the pantry for olive oil. Success! I found a bag of sweet peppers, you know the ones, the ones you can just grab and bite! Red, yellow, and orange. They taste amazing. There was bag of potatoes, and a red onion. Inside of the seasoning cabinet I found steak seasoning, and sea salt. In my head, I was happy because I could eat before I hit the store.

This simple potato dish was ridiculously flavorful with minimal work. My BFF’s Dad loved it soo much that the night before I left, he went to the grocery store at 10:30 at night, just so I could make another round before my flight at 7 am, Monday morning!!
