First I must say, I wanted to make something festive for the holiday season. Honestly, I was trying to make some fancy salads for my meal prep clients. No one wants to eat the same salad all the time. Now, my meal prep clients are vegans, meat eaters, and pescatarians, so whatever I create has to be able to cross over for each group of people. It was November….Decemberish and Pomegranates are in full effect. They are everywhere, and I wanted to use them in a way that would make the dish memorable, and not the normal “juice it”. So making a dope Salad won. Mixing and matching flavor profiles is my thing. I always just want to put different things together. Finding this recipe made my heart skip a beat.
