How to Make Spicy Black Eyed Peas

My family would make Black Eyed Peas and Greens for New Year! I can’t tell you why so if you know leave it in the comments! My family is from the South so there is alwayssssss meat or something in there to add flavor so I wanted to do it without the stuff that I don’t eat anymore. You know my thoughts, just because it’s Vegan doesn’t mean it has to be flavorless!!! So try this recipe and let me know what you think!

Ingredients

  • 2 Bags of frozen Black Eyed Peas or 1 bag of Dry Black Eyed Peas (follow cooking instructions on bag)
  • 1 Stalk of Celery
  • 1/2 Red Onion Sliced or Whole
  • 1 tsp of Smoked Paprika
  • 2 tsp of White Pepper
  • 4 Cloves of Garlic
  • 1/2 Cup Balsamic Vinaigrette Dressing (Brown, Thick)
  • 1 tsp Sea Salt or Pepper Blend
  • 1 tsp crushed red Pepper (or more to taste)
  • Ingredients for Cha Cha
  • 1 lb of Okra, Sliced
  • 1 Whole Tomato, Diced
  • 1 Stalk of Celery Diced
  • 1/4 cup of water
  • 1 tsp crushed red Pepper
  • 1/4 cup of vinegar
  • 2 cloves of Garlic
  • Cook Separately - White or Brown Rice (read the package for cooking instructions)

Instructions

  1. Add Beans to a Pot
  2. Add water to the pot to cover the beans (half over)
  3. Add all dry ingredients to Beans and let boil
  4. Begin to Cook your Rice (Beans and Rice could take the same time to cook, sooooooo just cook them both now)
  5. Now let's make this Cha Cha!!
  6. Dice your Onion, Tomato, Celery & Garlic
  7. Heat a pan (medium heat) and add garlic, onions and okra. Cook for about 4 minutes, you are going to cook til the onions start getting a little translucent, if you think I needs moisture, add a small amount of water.
  8. Next, add seasonings and vinegar , turn fire down to a low heat
  9. add water slowly and as it evaporates keep adding slowing til the cup is empty
  10. It's going to make your veggies taste a bit pickled (don't trip... it goes with the beans)
  • Ready in : 50 Minutes
