It’s the perfect time for this Summery Lemon Basil Pasta Salad! We all know I love happy food and this for sure is one of those feel good recipes! You can also make it gluten free by just using gluten free noodles!

It’s sooo good and perfect for the season :). I’m pulling up to every BBQ this summer with this dish! It is straight fire!

Ingredients

  • 8 oz. box of pasta of choice
  • 3 tbsp olive oil
  • 1-2 tsp red wine vinegar
  • 2 tsp honey
  • 1/2 tsp minced garlic
  • 1 tsp dijon
  • 2 tbsp fresh lemon juice
  • zest of 1 lemon
  • salt and pepper to taste
  • 1/2 cup shredded vegan parmesan
  • 1/2 cup basil, thinly sliced/chopped

Instructions

  1. ook pasta according to the instructions on the box. For pasta salad I prefer mine al dente so I go about 1 minute under the suggested cook time. AND DON'T ADD SALT TO THE WATER SAINT!
  2. While the pasta is cooking, in a small bowl whisk together the lemon vinaigrette ingredients by combining the olive oil, lemon juice, honey, garlic, dijon, red wine vinaigrette, salt and pepper. Set aside.
  3. When the pasta is done cooking, drain and rinse the pasta with cold water.
  4. In a large bowl add pasta and lemon vinaigrette. Mix to combine.
  5. Add lemon zest, shredded cheese, and basil. Toss around. Taste and add more lemon juice/zest, salt and/or pepper if necessary.
  6. Cover and refrigerate until it’s chilled... but if you are a bit greedy like your girl.. just taste some. It's Straight Fire!!!!!!!
