First things first, I don’t make regular Mac N Cheese at my house anymore!  Did you hear that?

None.

My family doesn’t even request it.  They expect my Vegan Mac N Cheese!

My guests that come over….they don’t request it either. You know why, because it tastes like God himself put the stamp of approval on this dish!

It tastes WONDERFUL!  It has all the creamy goodness, all the cheesy flavor as regular Mac N Cheese!  I’m not joking, you are just going to have to try it yourself!

I didn’t even want to share the recipe, but what’s a good thing if you can’t share it with friends?

Ingredients

  • Pasta Shells 16 oz
  • 2-3 Bags Daiya Cheese (vegan) Mozzarella & Cheddar 1 pack each
  • 1/2 container Vegan Sour Cream (tofutti)
  • 1/2 container Vegan Cream Cheese (daiya or toffuti)
  • Almond Milk or Soy Milk (non dairy milk)
  • 1 tablespoon Garlic Chili Sauce
  • Parmesan (vegan) To Taste
  • 4 Cloves of Garlic (unless you want more or less)
  • Canadian Steak Seasoning (to taste, start with a tablespoon)
  • Himalayan Sea Salt (start with a teaspoon)

Instructions

  1. Boil pasta according to packaging
  2. Preheat oven to 400 degrees
  3. In a bowl combine Pasta, Sour Cream, Cream Cheese and minced garlic
  4. Add both packs of Daiya
  5. Stir together
  6. add Himalayan sea salt to taste, I don't like it too salty,
  7. add 2 tablespoons of Canadian steak seasoning to start, add more to taste
  8. add Almond Milk/ Soy Milk/ Dairy Alternative until the mixture is creamy (not watery), I will use like 2-3 cups.
  9. Spray your pan for easy clean up afterwards. (p.s. vegan cheese doesn't stick to the pan, like the regular stuff, and think of the insides of your body, it will be happy for that)
  10. Fill your pan, and top with Parmesan (vegan that is) and pop that baby in the oven for like 20-30 mins. Until you see it bubble and become golden brown.
  11. Let it sit for like 10 minutes if you can wait that long (there are always spoonfuls in the corner missing in my house)
  12. Plate, and be prepared for your tastebuds to be forever satisfied!

    Hello Que,
    We recently sampled this at Detroit Veg Fest on Sunday and fell in love. My two daughters immediately looked up the recipe for me. I would love to make a pan or two for their prom get together this weekend. Can you give me amounts for the following: pasta shells, sour cream, cream cheese and chili paste.

    Entering the vegan having three bad experiences with vegan cheese in everyway it could be made. I gave up on it..No sir No ma’am No cheese PLEASE!… Que gave this Mac and Cheese New Llife in my book. Thanks you! for giving me hope again.     I am about to start my vegan journey and I would like to make this dish. I was wondering can you tell me how much of Vegan Sour Cream, Vegan Cream Cheese, Chili Paste, and Parmesan do I need to make the dish. Thank you in advance.

    I am lactose intolerant and I had given up hope on ever having good mac and cheese ever again. That was until you came to my job and proved me SO wrong. I am counting down the days until you come back! I am going to try to make this on my own but I know that nothing will compare to how delicious it is when you make it!!! Thank you so much for proving me wrong about vegan mac and cheese. Thank you for being the best of the best!
