Sooo I know that the holidays are approaching and everyone has Mac and Cheese on their tables. It’s a dish that is loved by all, but served as a side or a main course depending on your culture.
Mac and Cheese in our family was a dish that my Momma (RIH…my Grandma..but I call her Momma) made with all of the love in Heaven & Earth! It was so creamy and gooey, and she used like six different cheeses. If Momma was cooking what you gotta know is that everyone was pulling up. The whole family! Okay!
So when I found out I was allergic to dairy, and went vegan my first thought was omggggg… What about Momma’s Mac and Cheese!!!! I was devastated! What was I gonna eat?
My brain needed a replacement, so I turned in to a Mac n Cheese scientist to try to “attempt” to make my Momma’s version..VEGAN! I TRIED SOO MANY DIFFERENT RECIPES… AND I WAS APPALLED! The flavors weren’t hitting like Mommas. So then I went back to the drawing board and looked for vegan cheeses that would
- Melt
- Not Contain Nuts
- What could make it creamy
And this is what I came up with.. and it’s straight… FIRE!
