Hi family !

Cinco De Mayo is this weekend! If you are looking for a colorful and delicious dish to pass or just love all Mexican food like me Then go get these ingredients! You probably have most of them sitting in your cupboards and there is only 3 steps so it is fool proof !!!

Ingredients

  • 2 Teaspoons Olive oil
  • 1 clove of garlic, minced
  • 1/2 cup of diced onion
  • 2 poblano peppers (cup) be sure to seed them then dice small
  • 1 3/4 cups of black beans ( canned, drain and rinse )
  • 1/2 cup of frozen corn
  • 1 teaspoon of cilantro
  • 1 teaspoon of oregano
  • 1 teaspoon of pepper
  • 1/2 teaspoon of sea salt
  • 2 teaspoons of lime juice ( i always add extra to taste though)
  • 2 cups of cooked brown rice
  • 1 cup of diced tomatoes
  • 2 dashes of hot sauce ( whichever is your preference I love Cholula )

Instructions

  1. Saute the Garlic and Oil in a skillet over medium heat for 30-60 seconds
  2. Add onion, peppers and cook for 5 minutes or until soft. Add the corn, cilantro, oregano ,pepper, salt and lime juice and cook over medium heat for 3-5 minutes.
  3. Stir in the rice,tomatoes and hot sauce last so that they do not over cook and cook for 2-4 more minutes
