Happy Cinco De Mayo!!
Who doesn’t love the ooey gooey goodness of Mexican food!!!
Well…today, when I leave the office I plan on meeting my Husband, and stuffing my face with sooo much Mexican food and Margaritas until my soul says…ok Que…ENOUGH! (LOL)
I will for sure post some pics for you guys to see later!!!! I just couldn’t leave you high and dry today though… so I made ENCHILADAS!!
There are 2 different versions one for the meat eaters made (with chicken) and another made for me, the Vegan of the bunch.
The insides are stuffed with a Bean Mixture. Choose your serving size and use all equal parts of:
- Black Beans
- Corn
- Diced Tomatoes
- Chilies
The Meat Eater version is made of a Whole Chicken Fryer
- Shredded
- Seasoned to taste
- Shredded Cheese Cheddar/Mozzarella
The Vegan version is made of Seitan (Chipotle flavor)
- Shredded/Diced
- Seasoned to taste
- Daiya Cheddar/Mozzarella
I will have a neat video for you guys asap… lol I did an apple update to my computer and everything is alllllll different! So once I figure it out… you will have it family 🙂
