Quick Eggplant Recipe for Dinner #Vegan or Not!

Eggplant is a Fruit that everyone thinks if a vegetable, and on top of that, many of us walk by it because its not a normal item that people cook everyday in a regular household.

That’s all about to change after today. This recipe is super simple, and easy.  It tastes pretty fricking amazing. My husband is not an Eggplant lover, but he ate it, and said, “Make it like this every time.”  That my friends is sign that I did my job! LOL!  The kids #HulkSmashed it as well!  I feel pretty accomplished!

Its great for you too! Eggplant is a great source of dietary fiber, Vitamin B1 and Copper. This fruit is loaded with manganese, vitamin B6, niacin, potassium, folate and vitamin K.

If you have issues with pulmonary embolisms, or clotting blood this is a natural way to help with healing. Weight loss and blood cholesterol are just a couple more things that Eggplant is good for.  So, put one in your cart the next time you are at the grocery store 🙂
