I have been trying to find pastas that look light and bright.  Basically anything not smothered in real cheese or vegan cheese, don’t judge me.  When I saw this pasta, my mouth watered.

This Pasta Sounds delicious and filled my food need !!

It’s seriously  a one pot, three step kind of meal!

Ingredients

  • 1 onion Chopped
  • 2 Cloves of garlic - minced
  • 1 Zucchini - Chopped
  • 1 Small Red Bell pepper - chopped
  • 4 1/2 Cupss uncooked fusilli pasta
  • 1 1/2 TSP red curry Paste
  • 3 cups Diced Tomatoes
  • 1 cup coconut milk
  • 1/2 cup frozen peas
  • 1/2 cup cherry tomatoes - halved
  • salt and pepper
  • 1 TSP fresh lemon juice

Instructions

  1. In a large sauté the onion for about 2-3 minutes. Then add the garlic, the zucchini, and the red bell pepper and cook for 2 more minutes.
  2. Add the remaining ingredients except for the cherry tomatoes. Cook for about 15 minutes.
  3. Add the cherry tomatoes and cook for two more minutes. Season with salt and black pepper. Enjoy!
