This is such a simple recipe that will change your life.  It taste amazing, and will rock your world!!!

I can’t wait for you to try it.  I wanted Mexican food, in a healthy way.  So I looked at all of my power foods that I could stuff inside of a Quesadilla!

Warm…ooey gooey goodness!

So let’s get this party started.

Ingredients

  • 1 Tortilla (Burrito or Fajita size)
  • 3 tbs Daiya Shreds (Cheddar & Mozzarella)
  • 1/4 cup shredded kale
  • 1 tbs black beans
  • 1 tbs corn
  • 1 tbs tomato
  • Frying Pan with a Lid
  • Water, in a squirt bottle, or in a glass

Instructions

  1. Warm your Frying pan under a low/med fire
  2. Add your Tortilla
  3. On one side of the tortilla, add the ingredients listed
  4. top with Cheez, and close so that you have created a half moon
  5. Turn the fire to med/ high and add water to pan, and place a lid on it, it will brown the tortilla and the steam will melt the cheez
  6. Flip over, and do the same thing, add water to the pan, it will become a beautiful golden brown
  7. The slide that baby off the plate, and cut it like a triangle
  8. One Quesadillas can be cut in to 3 or 4 pieces that you can grab quickly! (it's really dependent on how hungry you are)
  9. Plate this with Salsa and Guac!
