Spring is here, and let me tell you…Summer Bodies are made in the Winter!

I created this salad, because I just wanted to play with some different flavors, and make my mouth happy.  Basically I needed to switch up my salad so I wouldn’t fall over from #saladboredom  🙂

This salad is quick and easy and is definitely a keeper!  It’s like a party for your tastebuds!

Ingredients

  • Baby Kale and Spinach (2 hand fulls)
  • 4 Strawberries sliced
  • 3-4 Portobello Mushrooms (sliced)
  • Red Onions (sliced)
  • Walnuts
  • Craisins
  • Raspberry Walnut Vinaigrette (Ken's)

Instructions

  1. We are going to build this salad like this
  2. your base is 2 handfuls of the Baby Kale & Spinach (yes you can buy it like that)
  3. Then in the corners of your plate, place portobello mushrooms
  4. in the center pile on the sliced strawberries
  5. On the sides of the strawberries, place your red onions.. please let me warn you this is going to smell amazing and you are going to want to eat it ...every second!!!!
  6. Top the salad with the Craisins and Walnuts (try not to buy the candied ones.. unless you just have to.. watch your sugar intake people!)
  7. Finally lightly drizzle some dressing on top of that there salad!!! LORD JESUS!!! IT'S SOO GOOD!!!!
